pork rib & winter melon soup

1.4kg baby back pork ribs, divided
5 thick slices of ginger
4 dried red dates
10g dried goji berries
10g dried shrimp
whole winter melon, peeled & chunked
firm tofu

Add enough water to a pot to cover pork ribs and ginger. Bring to a boil. Strain out water, and rinse the pork and ginger.
Add dates, goji and shrimp to the pot, and cover with water. Boil for at least two hours. Season.
Add winter melon and tofu and simmer until melon is soft and tender.
